Carrot Cake by Jori's Auntie

For remembrance - those who follow this recipe never fail!

What you need:
- 3 carrots (larger ones, after peeling, you get about 10.5 oz)
- 4 eggs, preferably farm-fresh ones, like Tarnacki's, as the dough turns yellowish then,
- ¾ cup caster sugar (I use regular sugar; works for us)
- ¾ cup sunflower oil (any other kind will do, but this one is best)

- 1.5 cups wheat flour (my aunt said to sift it through a sieve)
- 1 teaspoon baking powder
- 1 teaspoon baking soda (no need for any sourdough, baking powder already does the trick)
- 2 teaspoons cinnamon
- a pinch of salt
- a handfulof raisins or nuts (if I have some, I throw them in - if not, I leave 'em out; the dough's still fine)

Cake tin:
A 30 cm load pan, but for guests, you can use a round cake tin (like a 24 cm one), gonna look nicer on the table.

The steps:
1. First, scrub the carrots thoroughly with a brush, peel and then grate them on the smallest holes.
2. In a large bowl, beat the eggs and sugar until slightly frothy - sugar don't need to dissolve completely. Auntie probably whisks by hand, since she avoids using a mixer, but it can be tough on the arms.
3. Pour in the oil and stir with a spoon.
4. Add the flour, baking powder, baking soda, salt, and cinnamon - stir everything (forget 'bout the mixer here too - a spoon will do).
5. Finally, add the grated carrot and, if you have any, add raisins or nuts. Auntie said if you toast the nuts briefly in a dry pan, they smell better.
6. Pour everything into a baking tin lined with parchment paper or greased and floured.
7. Bake in a preheated oven at 340 degrees Fahrenheit or 170 degrees Celsius - top and bottom - for about an hour (till a toothpick comes out clean).
8. Once cooled, dust with powdered sugar. For the kids, you can drizzle with icing–orange icing works best for zesty flavor.
