Plusk, or Beaver Tail

The beaver, as an aquatic animal as well as possessing the qualities akin to fish rich in fat, which Pliny the Elder himself described as living to be covered with scales, is very much appropriate for serving on Lent days. Take heed, my gracious lady, to the fact that even the Cistercians, who fast for most of the year, consider and consume beaver tail as fare for Lent.

If you wish to serve this delicacy to your table, proceed thou as follows: initially, immerse the beaver tail in boiling water, and frequently pour hot water over its scales until fully clean.

Forthwith, the tail ought to be placed in a long pot, wherein 'tis to be joined by the company of pork fast slabs, generously sprinkled with butter, chopped onion, dried, dried marjoram, tarragon, and lovage. Do remember to add cloves to remove the fishy odor, enhancing thereby the flavor of the dish along the way.
